My Food Staples

I’m pretty sure I spend more time getting lost in the aisles of Kroger than I do shopping for clothes.

Grocery shopping is one of my favorite things. I literally have to write out a list and force myself to stick to it, or I’ll end up buying half of the things I see. 

Since health is such a large aspect of our culture these days, I thought I’d start writing some tips and such related to healthy living and eating. 

Let me be clear, though – I am nowhere near super healthy. This is going to be as much of a learning process for me as it will be for you. I’ll just try to share cool workout ideas or healthy meals that I’d actually eat (because I don’t think I’ll ever be able to honestly say kale is good). 

I also have friends that are super fit and always give me great ideas, so why not share them here! For this week, though, I’ll just share some of my favorite healthy meals (and they’re very easy to make). 

  1. Pita Pizza: I actually got this idea from a “fit girls” guide. I love pizza (I mean, who doesn’t?), and this is a great low-calorie version of it. You need a packet of large pitas (whole wheat english muffins work well, too), sauce, and then shredded mozellera! I also like to add crushed red pepper flakes for some extra spice. Stick it in the oven for about 10 minutes at 350 degrees, and you’re all set. 
  2. Vegetable Soup: I love making homemade vegetable soup because I can pick all of my favorite veggies and eat them all at the same time! I typically will mix vegetable broth with low sodium chicken broth (because I’m not as big of a fan of straight veggie broth) and then add veggies like zucchini, potatoes, peas, carrots, green beans, celery, and others. I’ll also add pepper, diced garlic, and parm cheese for flavor. 
  3. Pan Roasted Chicken: This one is super easy, as long as you have some time to prep. Once you clean your chicken (and flatten it a bit with a meat mallet to make it even for cooking), you can add some spices. I typically rub olive oil on it to make sure the spices stick (and to add a bit of flavor) and then add light salt, pepper, garlic powder, and some paprika. Cook each side for 10 minutes in the pan, and voila! 
  4. Bonus Treat – Halo Top Ice Cream: Okay, so this isn’t necessarily a meal (although, I don’t judge), but Halo Top is a new brand of protein infused ice cream. There are tons of flavors, and a pint is usually under 300 calories total! So yummy. 

I also made my pita pizzas this past week… And in the transfer from the pan to my plate, this happened… Guess you can’t win them all.
